The short version

Almost everyone stores supplements in one of two places: the bathroom cabinet or the windowsill above the kitchen sink. Both are the warmest, most humid, most light-exposed spots available. Meanwhile the date printed on the bottle gets treated as a hard boundary, as though a capsule is fine on the 30th and spoiled on the 31st.
Both instincts are backwards, and the reasons are worth knowing because one of them costs you money and the other costs you potency.
What an expiry date on a supplement actually is
It is a manufacturer's estimate of how long the product will hold its labelled potency under recommended storage conditions. It is not a safety cliff and it is not independently policed the way a drug expiry is.
The best data on how conservative these dates tend to be comes from pharmaceuticals. The FDA ran the Shelf Life Extension Program for the US Department of Defense for 20 years, testing stockpiled drug products to see whether their dating could be extended. Across 122 different drug products covering 3,005 lots, 88% of lots were extended at least one year beyond their original expiration date, with an average extension of 66 months.
Read the authors' caveat as carefully as the headline, because it is the actionable part: the additional stability period was highly variable, and stability could only be assured by periodic testing of each individual lot. In other words, most products last far longer than the date says, and there is no way to know which ones from the outside. Supplements are less tightly regulated than the drugs in that programme, so treat the extrapolation as directional rather than a licence.
The two things that actually degrade a supplement
Oxidation is the fast one, and it mostly affects oils. When 32 encapsulated fish oil supplements sold in New Zealand were analysed, 83% exceeded recommended peroxide values, 25% exceeded anisidine thresholds, 50% exceeded recommended total oxidation values, and only 8% met every international recommendation. Only 3 of the 32 contained EPA and DHA at or above the labelled amount.
Here is the line from that paper that matters most for storage: best-before date, cost, country of origin and exclusivity were all poor markers of supplement quality. A recent date did not mean a fresh oil.
To be fair to the category, a later analysis of ten Australian and New Zealand products through an accredited laboratory found all ten met their label claims and the recommended peroxide level. That study had industry involvement and covered fewer products. Together they say the same practical thing: freshness is a property of a specific product and how it was handled, not something the date guarantees.
Moisture and heat are the slow ones, and they matter most for live cultures. A controlled storage study of dried encapsulated Lactobacillus plantarum held capsules for up to 45 days at four water activities (0.11 to 0.70) and three temperatures (4, 30 and 37°C). The finding was direct: as water activity and temperature decreased, survival of the dried cells increased, with more than a one-log difference between conditions in some comparisons.
That is a laboratory model with encapsulated cells, not your bottle on a shelf, and it should not be over-read. But the direction is unambiguous and it is the physical basis for every "store in a cool, dry place" instruction that people ignore.
The practical version
- Not the bathroom. A shower puts a room through repeated humidity and temperature swings several times a day. It is the worst storage location in most homes and it is where most people keep everything.
- Not the car, not the windowsill, not above the stove. Heat and light both accelerate degradation, and a car in summer reaches temperatures no stability testing anticipated.
- Leave the desiccant packet in. It is there to control exactly the variable the storage research points at. Throwing it out is the single most common self-inflicted error.
- Close the bottle properly and do not decant. Transferring capsules to a pretty jar or a weekly pill organiser removes the seal, the desiccant and the opaque container in one move. For a week's worth that is fine. For a month it is not.
- Refrigerate the ones that say to, and fish oil regardless. Cold slows oxidation, and the freezer works for a bulk bottle you will take months to finish.
- Use your nose on oils. Sharply fishy or paint-like means oxidised. That is a return, not a supplement.
Should you throw out an expired bottle?
For most dry vitamins and minerals stored properly, an expiry date passing by a few months is a potency question rather than a safety one, and minerals in particular are elements — they do not decompose. The honest answer is that it will probably be somewhat weaker and probably fine.
The exceptions are worth taking seriously: fish oil and other oils, live probiotics, and anything that looks, smells or feels different from when you bought it. Gummies deserve their own mention because they are hygroscopic, sugar-rich, and frequently the least stable format on the shelf.
What we'd actually tell you
Buy smaller bottles of anything oil-based, even though the large one is better value per serving, and keep them cold. Buy the large bottle for dry, stable items and store them somewhere dark and dry that is not a bathroom.
And notice what this article implies about certification. Third-party testing tells you what was in the bottle at manufacture. Everything after that is on the supply chain and on you — which is another reason to hold a bottle you are not going to finish to the same scrutiny as one you will, and a reasonable prompt to cut your stack down to what you actually get through.
Good questions
Can I take supplements after the expiry date?
For dry vitamins and minerals stored properly, usually yes, with the caveat that potency may be somewhat lower. Minerals are elements and do not decompose. The real exceptions are oils, live probiotics and anything that smells, looks or feels different from when you bought it. Fish oil in particular should be judged by smell rather than by date.
Where should I store my supplements?
Somewhere cool, dark and dry that is not the bathroom. A shower cycles that room through humidity and temperature swings several times a day, and storage research consistently shows degradation accelerating with both. A bedroom drawer or a kitchen cupboard away from the stove and the window is better than any medicine cabinet.
Should I keep the little packet inside the bottle?
Yes. The desiccant is controlling the exact variable that storage studies identify as most damaging. Removing it because it looks like rubbish is the most common self-inflicted storage error there is. Leave it in until the bottle is finished, then discard it with the bottle.
Does fish oil need to be refrigerated?
It benefits from it, whatever the label says. Oxidation is the fastest degradation pathway in the category, and cold slows it. Buy smaller bottles even though larger ones are better value per serving, keep them in the fridge, and treat a sharply fishy or paint-like smell as a reason to return the product rather than finish it.
Are gummy vitamins less stable than capsules?
Generally yes. Gummies are hygroscopic and sugar-rich, which makes them more sensitive to heat and humidity than a dry capsule in a sealed bottle. They also tend to be the format where label accuracy problems show up most often in laboratory analyses. If you keep gummies, keep them sealed and cool and finish them well inside the date.
Is it safe to put my supplements in a weekly pill organiser?
For a week at a time it is fine. The problem is decanting a month or more into an open-topped container, because you remove the seal, the desiccant and the opaque bottle in one move. If you use an organiser, refill it weekly from the original bottle and keep the bottle closed in the meantime.
